Ali Cooks: Balsamic Glazed Mushrooms with Feta

 Thanksgiving Day for a vegetarian...  Thanksgiving Day for a vegetarian needing to prepare a dinner dish with little prep/cook time...  Mushrooms come to mind.  Glazed mushrooms?  Ok!  And you know what I like to eat with mushrooms?  Feta!  Decision made.

The actual dish this is mildly based off of is called 'Mushroom Skulls.'  Brian and I saw an entertaining trick for Halloween parties performed by the TV hosts of The Kitchen back in October.  Basically you would carve out the little mushrooms so that they look like skulls.  I decided to opt out of the adornments and stick with the simple and quick concept of baking the 'shrooms, heating the vinegar, and promptly combining.

And I can guarantee it was much easier than your traditional turkey!  ;)


Balsamic Glazed Mushrooms with Feta

Ingredients:
Approximately 24 medium mushrooms
1/2 cup Balsamic Vinegar
Feta cheese

Instructions:

Preheat the oven to 375 degrees.

Grease a pan or baking sheet and set aside.
Place each mushroom on the prepared baking dish.
 
  Bake 15-20 minutes.  Allow to sit and come to room temperature.

  Heat the balsamic vinegar in a small pot over medium-high heat until reduced by half.

Cool to room temperature and drizzle over the top of the mushrooms before serving.  Garnish with feta cheese.
