Ali Bakes: Peppermint Bark

Adventures that happened on Monday aren't to be discussed until Thursday.
 
That's just the way it is.

PEPPERMINT BARK!
 
 
I fell in love with it over a year ago when the lovely Alissa introduced me to the delicious yet simple recipe.  Brian and I replicated it Monday night and tasted it Tuesday night (it had to set up in the fridge).
 
Let's just say that it's STILL delicious!  I would recommend swirling it if you make it because ours completely separated the white/dark chocolate layers when it was cut.  (We also made a teeny tiny mini batch!)
 
Ah well, still delicious!
 
 
Peppermint Bark

Ingredients:
10 oz good quality dark chocolate
12 oz good quality white chocolate
1 cup crushed peppermints (or candy cane)
 
Instructions:
 
Line a 9x13" pan with parchment paper (or spray the bottom with non-stick spray).
 
 
Melt the dark chocolate in the microwave.  Pour the melted dark chocolate into the pan and spread with a spoon to coat the bottom of the pan evenly.  Place pan in the refrigerator for 20 minutes.
Meanwhile, crush the peppermints or candy canes and set aside.  These need to be ready to use as soon as you spread your white chocolate.
 
Once the dark chocolate is set, pull it out of the refrigerator and melt the white chocolate the same way. 

Pour and spread around the pan, swirling if you choose.  Immediately sprinkle the crushed peppermints onto the white chocolate before it sets.  Place in the refrigerator again to set.  When the bark is set, break into pieces. (Some thawing may be necessary).
