Ali Bakes: Banana Peanut Butter Chocolate Chip Muffins

Brian was away at a training for most of this past week, and boy oh boy was I lonely!  So...I was super-ready for him to be home on Friday!  I sent him about amillion texts from the time he left Wednesday until he arrived home Friday afternoon.  And one of those texts (pretty sure it was on Friday) said:  "On Saturday I'm making us muffins."

His response?  "Yuck."

So I of course was pretty satisfied.  In Brian-speak, that means, "Awesome, can't wait, thanks!"

Yeah, our relationship is super weird, but we're both ok with it.  AND I successfully made the below muffins (along with like, five other recipes this weekend...), so make your honey a little breakfast/snack surprise (and be sure to enjoy some yourself!).


Banana Peanut Butter Chocolate Chip Muffins

Ingredients:
1 cup peanut butter
2 bananas
2 eggs
1 tsp vanilla
2 Tbs honey
1/2 tsp baking soda
1 tsp apple cider vinegar
Semisweet chocolate chips
 
Instructions:

Preheat oven to 400 degrees.  Combine all ingredients except chocolate chips in a mixing bowl until most lumps disappear.  Pour the batter into greased muffin tins.  Next, place the chocolate chips on the surface of each unbaked muffin.  Bake for approximately 15 minutes and cool on a cooling rack (if you don't just dive right in!).
