Ali Cooks: White Cheddar and Spinach French Bread

Sometimes, I like to pretend I'm on the show Chopped.  You know:  "I have these ingredients on hand, what can I make for dinner?"

Yesterday's dinner was like a Chopped dinner.  I had half of a frozen baguette in the freezer, some remnants of cream cheese that Brian brought home from a work meeting, and a bit of green onion and spinach to use up.  What resulted was the below white cheddar and spinach French bread.  

Brian was unsure if he should make pasta to accompany it, so I told him to wait until we eat the dish and then decide if he's still hungry.  He wasn't hungry, so I'd say that the below recipe serves two!  :)

Now...time to do some grocery shopping soon!


White Cheddar and Spinach French Bread

Ingredients:
2 Tbs. butter
½ c. green onions, chopped
3-5 c. baby spinach
¼ tsp. salt
1/4 tsp. Old Bay seasoning
1/4 tsp. pepper
1/2 cup cream cheese
¼ cup Parmesan, grated
½ loaf French bread
1/2 cup extra sharp white cheddar cheese, shredded

Instructions:

Preheat your oven to 400°.  
 
In a large saute pan melt the butter and add the green onions, spinach and salt.  Saute for 3-5 minutes until the spinach is wilted.  Add the cream cheese to the pan and heat just until melted then add the Parmesan, Old Bay, and pepper stirring just until it is well incorporated.
Slice your loaf of French bread in half lengthwise and place on a baking sheet, cut sides up.  Spoon the spinach mixture over both of the loaves and top with the shredded cheddar.
Bake for 10-15 minutes.  Serve immediately and enjoy!
