Ali Bakes: Cinnamon Macadamia Yogurt Cookies

 The late afternoon/evening of my Wednesday was not good.  See, I was on a mission.  I was going to schedule an appointment with a specialist to fix my lovely digestive issues.  However, as usual, it wasn't that easy.  Between matching up a provider with my insurance, finding the right phone numbers, sitting on hold FOREVER, being told that some providers only do certain services, and then being sent to voicemail at the end of it all.  NOT what I had in mind with my 'gonna get this done' mindset.

A very upset Ali was not going to go to yoga because of a bad mood and not enough time to make it there.  A very upset Ali was not going to go to the rec because of a bad mood and not enough energy to think about exerting extra effort.  A very upset Ali was hungry.

So a very upset Ali ate some dinner and then opted to bake away her feelings.

Brian helped, so it was even more uplifting, too!  We decided we wanted to use some of the cinnamon macadamia nuts that were gifted to us from Brian's family's trip to Hawaii (that I was lucky enough to attend, too!).  Those crunched up nuggets of goodness dispersed throughout the drop cookie dough tasted like a well-baked scone--and we added some chocolate chips to about half of the nutty-filled cookies for an extra sweet taste!

The photos aren't the greatest, mostly because the cookies don't darken in the oven, so they kind of look unbaked completely.  Don't be deceived--inside that light exterior is a fluffy bite of sweet, cinnamon-y delicious-ness.

And at the end of it all, I was in a much much better mood.

 
Cinnamon Macadamia Yogurt Cookies

Ingredients:
2 ½ cups flour
1 tsp baking powder
1 tsp salt
2 eggs
1 ½ cups powdered sugar
¾ cup Greek yogurt
1 ½ tsp vanilla powder
cinnamon macadamia nuts
chocolate chips
 
Instructions:

Preheat oven to 350 degrees.
In a large bowl, combine the flour, baking powder, and salt.
Whisk in the eggs and sugar.
Add in the yogurt and vanilla; stir.
Fold in the macadamia nuts and combine well.
Drop cookie batter with the help of two spoons onto two cookie sheets.  Press chocolate chips into as many cookies as desired.
Bake for 10-14 minutes, depending on cookie size.  Cookies will not get dark but will be firm to the touch (the texture will be like a soft scone).
Cool on the baking sheet for a couple minutes before transferring onto a wire rack.
