Ali (and Brian) Cook: Chocolate Chip Peanut Butter Pancakes

A few days ago, Brian and I declared that today would be:  Pancake Day.
 
Every so often, this exciting day comes about, and the two of us seek out a pancake recipe to try out.  Today's Pancake Day Recipe:  Chocolate Chip Peanut Butter Pancakes.
 
 
It feels weird claiming this blog post as my own because I obviously had help every step of the way--especially since I have been sick and pretty incapable of doing much at all by myself.  I also give credit to Brian for taking on the anxiety-inducing task of being the Pancake Flipper.  (He rocked it out, too!)
 
Let the photos stand witness to the deliciousness.  And as a sweets lover, I can even say that the peanut butter drizzle at the end is completely optional--I like the pancakes BOTH ways!
 
 
Chocolate Chip Peanut Butter Pancakes

Ingredients:
1 cup flour
2 tsp baking powder
1/4 tsp salt
2 tbs sugar
1 large egg
1 cup milk
1/4 cup peanut butter
1/3 cup chocolate chips
Peanut butter, melted (to drizzle)
 
Instructions:
 
In a large bowl sift together flour, baking powder, and salt.  Add sugar and set aside.
In a separate medium bowl, whisk together the egg, milk, and peanut butter.
Make a well in the dry ingredients and pour in the wet ingredients.  Stir until combined and moistened but don’t over-mix.  Fold in the chocolate chips.
Heat a frying pan over medium heat and coat with cooking spray.  For each pancake, drop 1/4 cup of batter onto skillet (you may cook two at once if the pan is large enough).  Cook until the surface of the pancakes have some bubbles.  Flip carefully and cook a couple more minutes.  Transfer to a plate and cover loosely with a hand towel to keep them warm.  Make sure to coat the skillet with cooking spray before every pancake or batch of pancakes so they don’t stick.
 
Serve immediately while pancakes are still warm.  Drizzle with
melted peanut butter if you're looking for an extra-sweet touch!
 
Oh...and if you're a fan of pancake batter (or really any batters!), don't forget to lick the bowl!
