Ali Bakes: XL Peanut Butter Cookie Dough Cup

Peanut butter and chocolate has been the theme for me lately.  The below deliciousness was supposed to look more like a peanut butter cup...but when you rush through a recipe and don't follow it quite right, you run out of chocolate and don't quite have a peanut butter cup at all...

But...still delicious.  And hey, this is pretty similar to the last peanut butter-chocolate dessert I made, so if you liked that, you'll very surely like this, too!  :)
 

XL Peanut Butter Cookie Dough Cup

Ingredients:
2 cups chocolate chips
¼ cup (1/2 stick) unsalted butter
¼ cup peanut butter
¼ cup brown sugar, packed
¼ cup powdered sugar
¼ cup flour
2 Tbs milk
1 tsp vanilla
½ tsp salt

Instructions:

In a small saucepan, heat the butter until melted.  Whisk in the brown sugar until dissolved, and then let it bubble for 1-2 minutes.  Remove the pot from the heat and whisk in the peanut butter.  Next, whisk in the milk and vanilla.  Place the mixture in the fridge for about 20 minutes or until it's mostly cooled.

Lightly butter a tart pan.  Melt the chocolate using a double boiler method, and spread it in the prepared pan, evenly along the bottom.  Place the tart pan in the freezer for 20 minutes to set.

Once the butter/sugar mixture is cool, whisk in the powdered sugar, salt, and flour until combined.  The dough will be wet, so place it in the fridge for 15 minutes to harden.
 
 
Once chocolate is set, spread the dough evenly over the chocolate. You can store your peanut butter cup in the fridge and cut pieces at around room temperature for cleaner slices.
