Ali Bakes: Easy Focaccia

Cheesy, wondrous bread.  That was EASY.

Seriously, this bread required yeast, but no kneading, a short rise time, and lots of enjoyment from the eaters.

It also made a good amount (lasted for two meals for us), so any effort is definitely worth it.

So even though I've rekindled a positive bread-making relationship over the past few months, it still feels good to make a super-simple bread because...homemade bread is usually always delicious!

Also, dipping it in oil or balsamic seems like a good, delicious ideas, as well...


Easy Focaccia

Ingredients:
3 1/4 cups all-purpose flour
1 packet Yeast
1 Tbs sugar
1 tsp salt
1 1/2 cups water
4 Tbs olive oil, divided
1/2 tsp fresh rosemary, chopped
1/2 tsp pepper
1/2 tsp sea salt
1/2 tsp dried thyme
½ cup shredded parmesan cheese
More cheese(s), if desired

Instructions:

Combine the flour, yeast, sugar, and salt in a large mixing bowl and stir until blended.
Combine the water and 2 tablespoons of the olive oil in a microwave-safe bowl.  Microwave in 15 second increments until the water is at 120° to 130°F.
Add the water mixture to the flour mixture.  Stir with a large wooden spoon until a dough forms.
Spread the dough into a greased rectangular pan . The dough might not completely go to the corners, but it will once it rises.
Cover the dough with a kitchen towel; let it rise in a warm place until doubled in size, about 30 minutes.
Using your lightly oiled finger, gently poke holes about every inch in the dough going nearly to the surface of the pan.  Drizzle with the remaining 2 tablespoons of olive oil. Sprinkle the top with cheese and herbs.
Let the dough rise uncovered for an additional 15 minutes while the oven preheats to 375°F.
Bake the focaccia for 30-35 minutes or until golden brown.  Cool slightly and eat!
