Ali Bakes: Double Chocolate Chip Cookies for Two

Sometimes, a late night snack can seriously, honestly, make you feel better.  Crummy day?  Make the crumminess worth it and create your own cookie crumbs...from double chocolate chip cookies!

To be honest, these decadent treats were going to be a Monday night snack from Brian and me.  But then some not-so-good news came around and I didn't want to finish the cookies (which really meant baking them, since the dough was already done).  The dough got popped in the fridge...until Tuesday night, when cookies were needed as a last-minute pick-me-up for Brian and myself.  Who cares if it was 10pm?!  Chocolate makes people happy (us included!).

Did the chocolate make us happy?  Well, it lifted our spirits for the short term and left us feeling comforted.  That's important sometimes, and I encourage you to find your own 'feel-better' dessert treat to have on hand for not-so-fun occasions.

Quick, simple, delicious cookies.  Mission accomplished!


Double Chocolate Chip Cookies for Two

Ingredients:

2 Tbs butter, softened
2 Tbs brown sugar, packed
pinch salt
1 egg yolk
1/2 tsp vanill
1/4 cup flour
1/4 tsp baking soda
1 Tbs unsweetened cocoa
1/4 cup Chocolate Chips

Instructions:

In a small bowl use a firm spatula to cream together the butter, salt, and sugars until smooth.
Add the egg yolk and vanilla.  Mix until creamy.
Stir in the flour, baking soda, and cocoa until a dough forms.  Add the chocolate chips.
The dough will be wet/sticky.  Separate the dough into two equal mounds.
Chill the dough balls in the refrigerator for 15 minutes (...or overnight...).  Preheat the oven to 350° F and transfer the cookie dough balls to a greased baking sheet.  Bake the cookies for 8-10 minutes.  Let cool on the baking sheet for 10 minutes or eat right away with a fork for ooey gooey goodness!
