Ali Bakes: Peanut Butter Swirl Brownie Bites

I haven't baked...in awhile.  And it was needed.  Why?  Well, because Brian and I have been eating candy instead of fresh-baked sweets.  Candy is WAY more addicting for he and I than baked sweets.  Homemade treats are easier to justify just eating one serving of (because it's so good that we want to save it and make it last!).  With candy...it's just candy, and there's plenty to go around so eating and eating and eating...happens.

But today I baked brownie bites.  Brownie bites that really stuck to the muffin tin pretty well, unfortunately.  (Luckily you can't see the bottoms of these in the photos.)  I scraped the bottom of the tins and crafted the crumbs into a new little brownie bite--waste not!

Also, these were supposed to be Nutella-swirled...but we all know what happens when there's Nutella in the apartment.  (Basically, I eat it all way too fast!)


Peanut Butter Swirl Brownie Bites

Ingredients:
4 ounces of semisweet chocolate
3/4 cup butter
1 1/2 cups sugar
3 eggs
1 tsp. vanilla
1 cup flour
Peanut Butter

Instructions:

Heat oven to 350°F and grease a muffin tin.
Using a double boiler method, melt the chocolate and butter stirring occasionally. 

Put the sugar in a large mixing bowl and add the butter/chocolate mixture stirring until blended.  Add the eggs and vanilla and beat until smooth.  Next gradually add the flour and mix well.
Scoop the batter into the muffin tins so that they are 3/4 of the way full.  (I had leftover batter...and felt obligated to eat it!)



Put a small dollop of peanut butter on top of each brownie bite.  Now take a toothpick and swirl the peanut butter into the brownie (don’t mix it in, just swirl).


Put the brownies in the oven and bake from for 15-20 minutes.  Let cool COMPLETELY before taking out of tins (I did NOT heed this advice...whoops.)
